Baked Spicy & Smoky Sweet Potato Fries

yields 4 servings
2 large sweet potatoes, cleaned with skins left on, and cut into wedges
1 teaspoons chili powder
1 teaspoon garlic powder
1 teaspoon cumin
1 teaspoon pepper
salt to taste
1 teaspoon olive oil

Preheat oven to 450 degrees.

In a small bowl, mix all dry spices together.  Toss potatoes in a large bowl with olive oil.  Make sure to only use a teaspoon.  If you use too much, the potatoes will come out soggy. Sprinkle with dry rub and toss to make sure potatoes are evenly coated. Lay out on a baking sheet lines with foil or cooking spray. Bake in oven for 20-25 minutes. Check on the half way through and stir. If the potatoes are getting too brown, spray with cooking spray.
